Savor Mediterranean Bliss: Easy Classic Hummus Recipe

Embark on a culinary journey with my classic hummus recipe, a delicious fusion of wholesome ingredients and irresistible flavors. Ingredients:

  • 1,5 cups of cooked chickpeas (cooked preferably with baking soda), drained and rinsed, (also preferably outer skin is cleaned, this will make your hummus more creamy),
  • 1/4 cup fresh lemon juice (about 1 large lemon),
  • 1/4 cup well-stirred ooganic tahini,
  • 2 garlics,
  • 2 tablespoons extra-virgin olive oil, plus more for serving,
  • 1/2 teaspoon ground cumin,
  • Salt, to taste,
  • 3 tablespoons ice water,
  • 3 ice cubes (I can hear you saying “what, ice” :), just trust me),
  • 1 teaspoon paprika, plus more for garnish

Instructions:

  1. Prepare Chickpeas: In a food processor, combine chickpeas, lemon juice, tahini, garlic, olive oil, cumin, paprika and a pinch of salt.
  2. Blend Until Smooth: Process until the mixture is smooth and creamy. Scrape down the sides of the bowl to ensure all ingredients are well incorporated.
  3. Adjust Consistency: With the processor running, add 3 tablespoons of water and ice cubes, until the hummus reaches your desired light, creamy and fluffy consistency.
  4. Taste and Adjust: Taste the hummus and adjust the seasoning by adding more salt or lemon juice if needed. Blend again to combine.
  5. Serve: Transfer the hummus to a serving bowl. Create a well in the center with the back of a spoon and drizzle extra olive oil. Heat some chickpeas with olive oil, walnut(if desired) and paprika in a pan, add it on the hummus. Sprinkle with a dash of paprika, cumin, lemon zest and parsley for a finishing touch.
  6. Enjoy: Serve with pita bread, fresh vegetables, or your favorite dipping options. Enjoy this classic homemade hummus as a delicious and healthy snack or appetizer!
